FINALLY! For the first time all summer I had a good, juicy peach. What has been up with the fruit lately? Milly, rotten and dry. But miracles do happen- a generous customer at my work gave me a whole bag of perfectly ripe peaches! Yippeee! But then i realized that I couldn’t consume them fast enough, and what a shame it would be to have to put them in the freezer for smoothies. Perfect fruit should be appreciated for it’s full flavor. So I gnashed on the idea of making a cobbler, but then I realized that I could probably eat a whole cobbler myself in 2 days…and it isn’t fair to tempt oneself to such extremes. And then I found THIS RECIPE for peach mousse. Tiny little cups filled with these beauties are a little more decadent than cobbler and almost as addictive.

Bouncy, creamy peach mousse…topped with strawberry yumminess. If you love sherbet you will fall in love with these. Super easy to make, these will undoubtedly impress your dinner guests.
