I just got my hair cut today for the first time in 6 months! Ahhh….it feels so good.
Halloween is right around the corner and Haunted Houses are prospering around here. I have no stomach for haunted houses or scary movies. A huge chunk of me feels like participating in these activities is invoking evil. I’m no fundamentalist (hellooo…I live in Boulder!) but I do believe in manifesting stuff. Actually, I’m so freaked out from writing this…that I’m gonna try to lighten the mood.
Have you ever peed your pants in a Haunted House? I have..and not just a touch. When I was 16 I went to one that was run by police officers. They were consistently crossing a lot of boundaries: touching you and breathing down your neck. I was so flipped out that I just…. peed. I was with a group of friends and wearing my mom’s long pea coat. “Thank the Lord I’m wearing this coat to hide my butt” I kept thinking! I bet you’re really happy you just read this gross story on a food blog, huh? Does it make you want to follow more of my recipes?
But….have you ever cooked pork? Before a few days ago I had NEVER cooked a pork product. I was raised vegetarian, which explains why I still have an aversion to cooking most meats. I found this great recipe in Cooking Light : Annual Recipes 2003…for Korean Style Pork. I highly recommend this…it is reallly good!

Pork on top of a bed of spaghetti squash
Adapted from Cooking Light: Annual Recipes 2003
1/3 cup tamari
3 tablespoons brown rice vinegar
2 tablespoons agave
1 tablespoon freshly grated ginger root
1 tablespoon dark sesame oil
1/4 teaspoon crushed red pepper
4 minced garlic cloves
1 and 1/2 pounds pork tenderloin trimmed
Preheat oven to 425 degrees.
Combine all ingredients and marinate the pork for 4-8 hours in the refrigerator, turning halfway.
Before cooking the pork, save the leftover marinade and put it into a small saucepan.
Heat a large ovenproof skillet on medium-high heat. Coat with some olive oil. Add pork and brown all sides (6-8 minutes).
Transfer to oven. Make sure you put some tin foil on top! Cook for about 40 more minutes or until it is cooked to your liking. Let sit for five minutes and then slice.
Bring the leftover marinade to a boil and then simmer for 5 minutes.
Serve up your lovely pork and top with some marinade. It couldn’t get better, really.
