Ridiculously Red Raspberry Sauce and Martha’s Just-OK Poundcake


Valentine’s Day is just around the corner…and you know what that means? ! Not only re-reading The Vagina Monologues for the 20th time….but drenching yourself and the food you eat in love-inspiring colors. Pink sparkly sugar cookies, fluffy red velvet cake, thick fuchsia scarves, blush frosting, cotton candy nail polish, cute scarlet mittens, ruby martinis, sexy cherry lipstick…and scrumptious….mouth watering….buttery…magenta raspberry sauce. Man O man this stuff is goood.

img_7059I know this photo might remind you of a Dexter crime scene…but just like that show….this sauce makes me grin from ear to ear. Call me a creep, but I do love the look of this splatter. After being slightly disappointed by the plainness of Martha’s Chocolate Pound Cake, I decided to top it with dark ganache. Hmm…it still needed a bit of umph. If there is one thing my grandmother taught me, it was the simple art of putting frozen fruit in the microwave.


Addictive Raspberry Sauce

1/2 Cup (or a little extra if you like it less sweet) frozen raspberries

1/4 Cup sugar

1 Tablespoon unsalted butter

1 Teaspoon dark rum (YUMM) or vanilla



Put your raspberries in a microwave safe bowl, and microwave for 30 seconds. Stir a bit and microwave for another 3o seconds. Now add your sugar and butter. Stir a bit, and microwave for another 20-30 seconds. You want the sugar to fully dissolve and the sauce to be hot but not boiling. Add your rum and stir. Perfecto!!! This sauce is really good atop a stack of pancakes as well. Enjoy the splatter!
